Exclude agents from the customers list

In our organization, we don't want our customers to share tickets with agents from the customer portal. Is there any smart way to exclude the Service Desk Agents from being added to the Request Participant Field?

Yes, don't add your agents to organisations. 

Customer will then have no idea of agents.
