I set up an incoming mail handler service for our new JSM project. But I could not find where I could update the schedule of it from Settings > Advanced > Services. Only optio I can see is 'Delete'. Perhaps I'm not in the right page?

The only option when it's not adjustable is when using the Cloud default mail server.
If you are not able to change the setting, I would advise to raise an issue at Atlassian.

Have you look at the "Incoming Email" section under the Mail section from System. I am not experienced on this type of setup. Let me of know of your findings.
It is my understanding that if the service is custom one, you will see an "Edit" button to change the configuration. May I ask how you created the service that you want to Edit? There will be service(s) that is out of the box and cannot be configured via the UI.

I created the email handler through Settings > Mail > Incoming Mail option. Then I clicked Add incoming mail handler button.
And after creating the options available are Edit and Delete.
Edit option does not have the set up for scheduled times.
