We have recently implemented and enabled Jira Service Desk widget on our portal. The problem we are facing is that when a user receives an automated response after creating a ticket, the email contains Jira Service Desk Widget name as the sender.
Is there any possibility to remove this name and add a custom name?

Unfortunately, it is not possible to change the sender of the notification when creating issues using the Widget functionality in Jira Cloud, however, we understand that the default name used (Jira Service Desk Widget) might cause some confusion indeed. That's why we created the following feature request to allow the customization option you are looking for:
- Change Widget notification sender to Project Name
