How do I edit the fields that appear in each type of resolution ( Completed, in progress...)
I need to clear the fields and leave only the necessary ones
If I'm understanding your question correctly, as the Administrator, if you go into settings (the gear)/issues, then on the left hand side, you can scroll down to 'Resolutions' and adjust accordingly.

The resolution field is a global list of possible resolutions. As an admin, you can go to Admin -> Issues -> Resolutions and edit the list, renaming, adding, or deleting what you need to. The default list is not a bad one, but it is very generic, aimed at covering most people, not people who have highly specific roles, so you will probably find a few that don't apply.
Be aware that if you delete any, you will need to flip issues using it over to other values, so think carefully before you delete anything, it's more like a merge than a delete.
