Hello, in the Customer field of Jira Service Management - there is a (greyed) note that states: Add a Reporter to view customer details.
This ticket has already been opened without Customer information, and we would like to add or update that information.
Is there a way to do this?

Welcome to the community!
For updating the reporter there is actually a specific permission. If you go to Project Settings > Access > Project Permissions there is a permission called Modify Reporter, you can add a project role or a group to have this permission and then the reporter should be able to be updated.
Also make sure the reporter field is on you screen if not already. Hopefully that helps let me know if you have questions
