I could see other people complaining about this for JSW but none for JSM.
Assignee has created 5 Sub-tasks on Parent ticket. You can see on the Parent ticket that the Sub-Tasks is showing the appropriate ticket numbers. On the Sub-tasks themselves, you can see the Parent Column is showing the appropriate Summary of the Parent, however, Parent Link is empty.
We would prefer to show Parent Link Column rather than Parent Column because there is far less text. How do I get this working or is this a bug?

This isn't a bug, it's standard Jira behavior.
The "Parent Link" field is used to map issue levels a little above Epic.
For example:
From Initiative to Epic > Parent Link (Levels higher than Epic it's available only to premium/enterprise plans)
From Epic to Story > Epic Link
From Story to Subtask > Parent
Although you can't see it on screen, when you associate a Story with an Epic, the "Parent" field is also updated internally in the base of jira. Atlassian's idea is between 2022 and 2023 to use only "Parent" to map all jira hierarchies and thus end this confusion.

If you are using subtask in your JSM project, the field that will be filled in jira to map the Story is the "Parent" field.
Subtasks cannot be linked to an issue via the "Parent Link" field. So it is not possible for you to see this data in the "Parent link" field or in the "Links" field.
