Basically we would like to give all our employees an account already configured to be able to create support tickets and track their updates without having to go through the registration process.
Is it possible that we create the accounts for them with a default password? | Another option would be to view the update of the tickets anonymously but that seems not to be possible at the moment.

The best method to use would be LDAP or Crowd. You may need your IT professionals (Your companys service desk) help with that. We use LDAP but we create users and don't set the password. This means it uses their Active Directory credentials, which we prefer. We've found this to be really good for releasing some of the burden off administrators.
You can also do exactly what you've mentioned which is create users and create them a password, its just quite time consuming as theres lots of fields to fill out. It also means you will have to manually remove people as well when they leave the business
