Is there a way to create a field viewable only to the internal team. I'd like to create a field on a form that is only viewable to the internal team.

Natively, it's not possible to specify permissions like this on a field level.
It is possible, however, to utilize issue security to configure permissions at the issue type level.
For field behavior, you'd need to evaluate a marketplace add-on.
