I'd like to create a report for each of our 14 sites for open, closed, how long it took to resolve service requests. Does anyone have any suggestions on how to build this report?
I'm new to Atlassian & many of the canned reports have a limitation of 20 items which I've added my name to the enhancement request too.
Any assistance or How To guide or documentation would be greatly appreciated.

Unfortunately, there is hard to get this report with native gadget, but you can achieve it with Time Between Statuses add-on which generates reports of the transition time from one status to another.
Or you can switch to histogram chart and get average time by average line.
Time in Status for Jira also might be useful if you're looking for time to resolution:
Add-on automatically shows the time each issue spends in each status and have status groups, dashboards, sprint report for deeper analysis.

as you've surely noticed by now, there is a number of apps from the Atlassian Marketplace that operate in this space. You can trial any app from the Marketplace for free for 1 month - so if a Marketplace app is an option for you, perhaps try a few and see which one works best for you.
On this note, my team and I work on another app that might be interesting to you: JXL for Jira.
JXL is a full-fledged spreadsheet/table view for your issues that allows viewing, inline-editing, sorting, and filtering by all your issue fields, much like you’d do in e.g. Excel or Google Sheets. It fully supports SLAs, and also comes with a number of so-called history columns that aren’t natively available, like e.g. time in [status], time between [status] and [status], etc. etc.
With these, you should be able to build a report like e.g. this in just a couple of clicks:
As you can see above, you can easily sort and filter by all your columns, and also use them across JXL's advanced features, such as support for (configurable) issue hierarchies, issue grouping by any issue field(s), sum-ups, or conditional formatting.

One of the many reports which the app provides is Time in Status in hours/days to determine , how much time the issue spent in each status. The app has 20+ reports to track your bottleneck Issues & Processes. You can group your statuses to define your resolution time too.
You can also create dashboard gadgets with the app.

Sometimes it can be difficult, confusing and time-consuming to find your way through the built-in Jira gadgets and create a solution on your own. For specific needs like yours, it is better to use out-of-the-box solutions. If you are open to using an application specifically tailored to your needs, Timepiece - Time in Status for Jira which is developed by my team at OBSS, is the tool I would highly recommend. Time in Status mainly allows you to see how much time each issue spent on each status or each assignee. With our application you can easily calculate how much time is spent on each status for all your sites. Just write a JQL that includes the project you want to see in your report, use it as a filter and let the app do the rest.

By using Time in Status app, you can also combine the time for multiple statuses to get metrics like Response Time, Resolution Time, Issue Age, Cycle Time, Lead Time etc. For all numeric report types, you can also calculate averages and sums of those durations grouped by the issue fields you select. For example total in-progress time per customer or average response time per year, sprint, week, month, issuetype, request type, etc. The ability to group by parts of dates (year, month, week, day, hour) or sprints is particularly useful here since it allows you to compare different time periods or see the trend.
Time in Status reports can be accessed through its own reporting page, dashboard gadgets, and issue view screen tabs. All these options can provide both calculated data tables and charts. And the app has a REST API so you can get the reports from Jira UI or via REST. Also you can export the reports in to various formats easily.
The app calculates its reports using already existing Jira issue histories so when you install the app, you don't need to add anything to your issue workflows and you can get reports on your past issues as well.

If you prefer to use a marketplace app, you can try Status Time Reports app developed by our team. It mainly provides reports and gadgets based on how much time passed in each status.
