Hello,
There are only a very few limited fields in the dropdown of Configure fields .This is while creating an issue in the Jira service Management for the project DEMO General Service Management . Please help how to get all the possible fields during issue creation. This helps to choose the required options /problematic areas for the users to select.
Available fields at this moment are

Due date
Description
Linked Issues
Issue - continuation to above field

Priority
Labels

Along the same thing mentioned by @Mayur Jadhav (after custom fields are created), then one can control fields exposure against projects, and lastly all fields (including custom fields) that one can control if the field(s) exposure by adding/removing them in the following places -
1) Project Create Issue/Edit Issue/View Issue Screens via project UI
2) Portal custom facing screen - REQUEST TYPE Forms (via portal UI)
Your image is focused on the 1st place - Project UI. Keep in mind that one should also check to see if "Show Fields" is using "ALL" instead of "Custom". The second option is based on each user preference, so there will be cases that users will state they don't see the questionable field(s) because they have chosen the "Custom" option.

Thank you for the detailed insights. Your reply helps a lot. Just confirming that the option ALL is selected after which the limited fields are seen. The suggestion from Mr.Mayur will also be considered.

If you are Jira Admin then your are able to create many custom field as per your requirement.
