Help solve the debate of who's always the 'last to approve' tickets.
We have 4 approvers on a ticket type "Change". Is there a JQL or some mechanism to report out the date/time stamp of each approval? Alternatively, listing out the final approver, which triggers automation to change status to "ReadyForInstall", would suffice as well.

You can set a user field for the "approve" transition in your Jira workflow.
First, you will need to create a custom user field in Jira, which will be used to capture the approver. Next, update your Jira workflow and add a post function which updates the "Approver" field in the "approve" transition. This way, the Approver field will always display the latest Approver.
The downside of this solution is that it cannot work for the issues that were already approved.
Alternatively, you can use Status Entry user custom field of the Enhancer Plugin. This will also be applicable to the issues that were already approved.
