I am completing my assignment at an organization that is using Jira Service Management. How can I keep my access to my data once my current account closes? Is there a way to add a separate account (google account) to be able to access Jira Service management data once my current account closes?

It sounds like you are asking to maintain access to data owned by a company after you stop working for them and they disable your access.
Have I understood your question correctly? If so, that doesn't seem legitimate. If the company owns the data you don't have any right to continue to access it when you stop working for them.

You need to talk to your supervisors about what you want to do.
Tell them what you want to do and why. They may agree to allow you to maintain access and work with you to set that up. Or they may advise you of some other way you can retain the information.
You may be under the restrictions of an NDA, or an agreement you signed where you acknowledged your work products created for the company are proprietarily owned by the company.
I don't know any of the details of your agreement to perform work for that company. I don't think it is appropriate for us to give you advice that could potentially violate such an agreement.

There are definitely ways for you to showcase your accomplishments. In my previous life, I worked on defense contracts, and believe me, there are ways to demonstrate your achievements without breaking any laws.
Before I share my tips, I want to make something very clear: No company has the right to ask you to provide data from another company during an interview. That is a serious red flag and illegal.
Here are a few tips to help you instead:
1. Create your own personal JSM demo. It’s free! Set up a demo project with fake data. DO NOT copy any company data into it. Use your own example scenarios to showcase your skills. (You can use AI to help you come up with data and scenarios if you are not to sure what to add)
2. Talk about the problem(s) you were solving. Describe your approach and the role you played. Highlight the outcome or impact. Even if you can not share the actual setup, your thought process and problem-solving skills are valuable on their own.
3. Contribute to the Atlassian Community or forums. Help answer questions, share tips, or even post about challenges you've overcome. This shows your expertise and builds credibility in the ecosystem.
Again, no reputable company should be asking you to share private company data. If they are, consider it a warning sign.
