I like to monitor the outgoing mails.
We are not always sure that a message in “Customer Reply” is sent when we create a Clone of a ticket or when we manually add a customer to a ticket.
Is there a logging of the outgoing mails?

Yes. See this community article about the feature. Successfully sent emails are currently not tracked, but this is on Atlassian's roadmap. See JSDCLOUD-13528 to stay in the loop of progress there.

Is there already an logging of unsuccesfull emails? That helps for the time being. Where can I find these?

That is explained in the article I shared. There is a customer notification log, visible only to project administrators.
