Hi there,

Could you please advise, why the option for choosing destination project disappeared when trying to move a ticket to another project?

I'm with "Administrator" permissions for all projects, i've never had this problem till now.

Admin does not mean "can see/do everything" (rightly, it's a bad thing to do it that way), it means you are an admin.

Check who can create issues, I would guess that you do not have the right to do it.

If a project is not offered to you in the new project field, then you don't have "create issue" permission in that project.
