So I'm quite new to Jira as my new company uses it and its the first time I have come across this platform.
Is there anyway of having visible notes on a ticket in the que view without having to go into the ticket?
Is there a way to have custom ticket status's or generic ones like "On Hold"?
Can we add any colour customisation to ticket types/status of the ticket?
Any help would be appreciated.

You can edit your queue to show particular field(s) as column(s), this article may give you more details on this: https://support.atlassian.com/jira-service-management-cloud/docs/edit-queues/
and Jira has 3 status categories and colors of the status is being applied based on the category it is created/edited. you can't apply custom colors for the same
Yes, you can create new/custom statuses for your project and configure workflow with it
