I activated JSM today on top JIRA Software license i had for years. I see the Organization Menu is not available under JSM. Only Customers Menu is visible. How to enable additional of Organization Menu

It's actually within the Customers Menu. Once you selected Customers from the JSM project sidebar, you should see two buttons at the top right corner

There's also the 'Customer service management' functionality that can be turned on under Project Settings / Features.
With that turned on, you will have a Customers and an Organizations menu option in your Left Sidebar menu under Channels & People.

When you say that organisation is not available, what exactly do you mean by this?
There was a recent update on the organisation product showcase, where you can pivot between the organisations from the product choosing menu, like this:
