In the WBS Gantt, is it possible to set the tasks by myself instead of insert the tasks from a project or a filter? Eg. there is a task belongs to a project, but I don't want it to be shown in the Gantt. I try to delete it from the Gantt but seems like it has to be deleted completely.

You have no choice but to select from either a project or filter in order to create a Gantt.
The best way I can think of to fulfill your requirement is to create a Gantt by selecting a filter.
You can use Save your search as a filter feature or an advanced search such as JQL that can be helpful to hide your issues/tasks from the WBS Gantt-Chart.
Below are the steps you will need to take to set up a filter/JQL.
Basic Search - Save as a filter
Click Filters > Select Advanced issue search
Once you define and run your search and then save it as a filter, you can create a new Gantt from the saved filter.
