Hi,
I am trying to add the "from" email address to a bespoke one that we have access to in our JSD Next Gen project.
I have done this before on the Classic JSD and its easy to locate, here in the Next Gen I cannot find this.
Can anyone help?

As @Angélica Luz said it is possible in Classic to change the outgoing email address but not yet in next-gen.
We're currently working on bringing this capability as well as notifications to next-gen. Would you like us / our designer to contact you to get some feedback on the new experience?
You might want to vote/watch the feature request and we will let you know once it ships, which will be soon (it's the next thing we work on after approvals).
I’d also love to hear how your experience with next-gen is going as well as how you plan on using this within your organization.

Welcome to Atlassian Community!
We understand that customizing the outgoing email in Jira Service Desk is a great option for customers to receive a more customized email instead of the atlassian.net one. Currently, this option is only available for Classic projects, since next-gen doesn't have the Notifications menu.
With that said, we created a feature request suggesting the implementation of this ability:
