Is it possible to:
1) - Set the default fields in the columns of our customers' requests list
2) - Make more fields available for customers to choose

You are limited to what column (fields) that you can expose to the Requests Listing UI in the portal. You can click on "Customize" option, then you can see what are the fields that you can add out of the box. Unfortunately, with another third party add-on, this is what you have from the JSM product.
