I need to know how long the ticket was stuck in each of my project statuses.
Example: From Open to In Progress how much time has passed between them.
There are a couple options here.
1. You can create a custom dashboard and add the gadget called "Time in Status" to it. The gadget will require a filter or a project to be linked to.
2. You can use plugins available on the market place. Example: Time in Status

Yes, by using the custom dashboard.
To do so, create a Dashboard from your Jira main menu, add the gadget called Time in Status and configure as attached. The result will be a line chart showing the average time in status.
