We would like to add new buttons tied to email for a customer to self resolve issues. Similar to the approve button. Is that possible

i don't think this is possible with the Customer notifications alone.
In automations you can style emails with html so might be able to do some magic there. With Apps like Email this Issue you can for sure add Actions and buttons and all sorts to your Emails. Not tried it within Customer notifications - trying to trigger a transition from an email other than the customer notification might get tricky with permissions.
