Our customers are able to open request tickets via email or additionally register for the portal if they wish to view their previous tickets, etc. I wanted to see if we can generate report options which will display the following:
Does anyone know if creating these reports is possible?

There is indeed no build-in solution.
I suppose your customer can self-sign in and there are not licenced users. So, to specify the solution of @Jack Brickey, I think the actual path you want is
Site administration > Jira Service Desk >Portal only customer » export users button
You need to be site-admin to access to the Site administration.
However you don't have the registration date, only the last session.
I don't think you can create a report but you can export the users (Jira settings > User management, select active and inactive) export to CSV and open in Excel and create the charts you want.
You may also be able to do this w/ an app addon, e.g. Scriptrunner, Power Scripts, or other. I'm just not personally experienced using an app addon for this.
