You can use Ultimate theming for Jira Service Desk (https://marketplace.atlassian.com/apps/1216144/ultimate-theming-for-jira-service-desk?hosting=server&tab=overview) to meet this request.
By using this add-one you can add multiple field types (but not all field types) in customer portal.

Currently, it's not possible to edit or change the columns in the customer portal.
