I wanted to know if it is possible to customize the requests page of the help desk used by customers by adding more filters and if is possible to modify the query/JQL that shows the list of requests so it can show different results .

You can try out our add-on Advanced Portal Reports that allows you to add a variety of columns and filters on the portal search. Here's a link to our documentation for more info.
