I recently synched a Jira project to a Trello board using Unito. My incorrect mapping led to the issue Summary fields being replaced. How can I undo this error??

Welcome to the community.  Assuming you have already correct the root cause of your error.  If you look at the issue's Activity section, you should see the before/after values for your issue's Summary field.  

If your goal is to just fix the issue summary (current value), you can manually use the original value and override the existing value.  If there are many issues, then you will need some type of custom REST APIs development to pull each issue's original summary value and update the field by looking at the history of each issue programmatically.

In my env, we don't use Trello, thus I don't know of the solution to correct your root cause if it is still not addressed with your one Jira project synchronization.

Thank you kind sir. Fortunately I only had 75 issues at this point, so was able too manually restore the Summary field, per your suggestion.
