I hope to be able to change the email subject so that different types of notifications can be differentiated from the subject itself.

you can customize the customer notification templates, please find the documentation for more details -Create and edit the content of your customer notifications | Jira Service Management Cloud | Atlassian Support
You can also try Jira automation and smart values to send notifications based on issue events.
