I want to create automation that identifies which of the service desks multiple email addresses a request was sent to. Is that possible?

If i understand you correctly, you want to identify the email address that the user sent the issue too.
What i can suggest is to split your request type for each email address, this is the simple way to find to whom the email was sent.
