I hope someone can help me with this question. We wanted to check which tickets have been changed by our users from SR to Incident issue type. I can only see it if I go through each record and check the History tab. But it is very time consuming.
Is there a quick and easy way to do this via JQL?

JQL doesn't support history searches for the issue type field.
I can suggest trying Issue History for Jira app as an alternative solution. It records changes for any issue type in a convenient list view. With a bunch of filters and columns editor, you can customize the report according to your needs.
My team created this app as a diary for everyday updates made by the users. Here is an example of the report. Issue type changes are visible in a separate column.

Unfortunately you can't do it via JQL. May be you can create a new field "old issuetype" and look for an automation rule that will fill this field everytime the issuetype change.
