I am trying to have some type of report that shows me all the time I entered on a specific day/Issue type.

If you want to easily generate reports based on the worklog entries, then we highly recommend our app called "Worklogs - Time Tracking and Time Reports".
Worklogs allows you to precisely filter the company’s logged work with a wide range of filters such as users, issues, issue types, labels and more. Additionally, you can display the data for a specific date range with a breakdown by day, week, month or year.
The filtered data can be then saved as reports that can be shared internally with colleagues and also exported to a .XLSX spreadsheet file for external use.
It's worth noting that the app uses Jira's native time tracking, meaning that any time tracked previously with this method before its installation will be immediately present in the app allowing you to display your desired report.

You might consider using time-tracking apps that in most cases have a customizable report of tracked time on issues.
I can recommend our Clockwork Automated Time Tracking & Timesheets Pro, or Free app which offers you the possibility to review timesheets and create reports that can be configured in various ways using break-down and filtering options.
Using timesheets, you can create a report and filter it based on several options including, issue types, labels, or other fields. You can choose a range for a whole year and break down the data by chosen fields. This information can be also exported to Excel files.

The Time Reports feature within the Time & Cost Tracker add-on can provide the functionality you're looking for. The add-on allows you to generate detailed time reports that can be filtered by various criteria, including specific dates and issue types.
The Scope tab within the Time Report will display a list of issues that have work logs within the selected date range. You can further customize the report by selecting specific columns to display, such as issue ID, issue summary, work log date, start time, end time, and work log comment.
The Team tab provides a summarized view of the work log data for each user within the specified timeframe and scope.
The Totals tab offers a concise summary of the total work log for the selected period.
The Time & Cost Tracker add-on also allows you to export these time reports to Excel for further analysis or sharing.

Im not concerned about cost as I am with tracking time entered on issue types on certain days

There are Time Reporst as well as timesheets functionality inside Time & Cost Tracker add-on. You can visit my work tab to see how long you worked on different issues within a timeframe devided by days, you can also see issues and comments to worklogs on hover, as well as edit worklog entry on this page.
Also you can generate Time Report if you need specific filter to be applied for issues you wanna see, for example to see worklos only for bug issue types.

No I am lookng for something that pulls how much time was entered on specific days/week instead of pulling time tracking as a whole.

Welcome to the community. Unfortunately, this functionality is not available out of the box. You may want to check Atlassian Marketplace for possible third party add-ons to give you that reporting functionality.
Question- You want to know only your work logged against an issue and not everyone else against the same issue?

Yes this would just be for me at this time. I am trying to find the average amount of time it takes for me in a period of time to work on all my issue types
