I am looking for a native way or an app to delegate approvals to a college when the user is off,
using this solution, a ticket can't be blocked because one of the approvals is on a vacation,

There is currently no option for delegate approvers.
I can think of two relatively easy work arounds for this:

I am the product manager of the app Keychain - Delegation for Jira which @Marc - Devoteam also suggested above.
By using Keychain you can easily delegate permissions in your workflows and JSM Customer Portal Approvals. Once a delegation is defined or modified, assignees or other fields on the issues are not updated. The delegated permissions are reflected to your issues immediately. Your original users do not lose their permissions.
Users define their own delegates in a categorized and timed manner. Delegations are automatically activated and deactivated in the defined timeframe. Different permission categories can be delegated to different users.
