Hey Team!
I have set up an automation to send a message to a Slack channel when a new issue / ticket is logged. I have managed to pull through the organisation, Issue Summary and description. But I would like to add a link directly to the ticket, any idea on how I can do this?

Have you tried to use the Slack Integration rather than using Automation? It's the last menu option in Project settings.
You can define the events that triggers a notification and those include a link to Jira by default.
