1. Notifications in Jira
Currently, the three of us do not receive any email notification when a new ticket is logged in Jira. We only receive emails once we’ve assigned a ticket to ourselves and the client replies back.
Are we missing something in our Jira notification setup?
Please assist us with enabling this.

Could you please check your internal Notification settings.
It will probably look like this at the top:
The easiest way would be to add the Role of Service Desk Team to the recipients.
