When my client submits the ticket on Slack, and the ticket gets Autocreated on Jira, I want the Client's organization to be auto-populated on the Organization field on the created JIRA ticket, how can I achieve this ?

You should be able do this with an Automation Rule. Just do an Issue Created trigger for the project then an action for Edit Issue. Select the Organization field and base it on the email domain of the Reporter.

I don't think that is possible, but have not tried it either. Not sure where to start with that other than opening a support ticket with Atlassian to ask.
