We are trialing Jira Service Management. I see that customers can view things in a portal (yay!) and from there find their way to a "Help Center." Can I customize what appears there? We use a different tool to collect new feature requests, for example, so I'd rather not have "Suggest a new feature" on that Help Center page.

Hi Elisabeth,
If I understand it correctly, the items you see on the "Help Center" can have some customization. You can sort it by alphabetical order A-Z or popularity, where you can feature some of your portals.

Yes, what is being shown on the portal is controlled by the request types that you have in the project. I would recommend that you take a look at the resource section for JSM which has a lot of information, https://www.atlassian.com/software/jira/service-management/resources
