We built a JIRA Service desk to test and replace our current service desk provider. I am not sure if it was somewhere in the setup or somewhere within our JIRA site but when the service desk sends an email through it comes through as "JIRA Service Desk test". How can we change this so that when we roll this out to customers it doesn't say test as their name?

If you go into the Project Settings < Customer Notifications and then select Edit Template you will see the below screen. Here is where you can edit the subject line. By default it should be issue key and issue summary so I'm guessing at some point that was changed.
I can see how to change the Subject in those settings but the piece I'm talking about is the actual email Name.
e.g. if I send a reply from this service desk it says "JIRA Service Desk Test sent you an email". Can I change that 'JIRA Service desk test' to 'Company name Support'

Sorry for the misunderstanding! That name is controlled by the project name. For example, if the project is called popcorn, it will send the name as popcorn.
The only way to change that is by changing the project name. As a workaround, you could specify the company name in the subject along with any other value you want.

We will look into changing the name and subject to better suit the customers for when we roll this out.
