Delete a value of a custom field option

What happen to the info of the tickets when I delete a value fo a custom field option

If you delete the selected value from custom field, it will be set to empty/none because the value no longer exist.

So, What do you suggest for this case. I need no longer the user can select an specific value of the list.

But I can't delete it.
