When configuring the field of a requesttype, some irrelevant fields are showing. I did not configure any of these irrelevant fields in field/screen configuration. What determines which fields are shown in the requesttypes? There's no difference in any issuetype attached to the requesttype.
Request types are configured within the project's settings. You are eligible to configure both the customer and agent view. The agent's view is based on the view issue screen, which you can further modify it by clicking on it (while on that specific request type). Kindly see the image below.

What you say is that the agent's view is based on the view issue screen. What I stated earlier and do not understand: why are there fields in the agent view that are not chosen in the 'view issue screen' section.
For example, I have 'time registration' and 'development' in the agent view, but you don't see them in the 'view issue screen' section. So my question is, why are these fields in the agent view when I haven't specified them anywhere else?

Development is present in your issues because you have the development feature enable.
With "Time registration" you possibly mean "time tracking". And again this is a feature which you can disable following this guide https://community.atlassian.com/t5/Jira-questions/turn-off-time-tracking/qaq-p/1236187
However, on your agent view, you can choose to hide these fields. Simply drag n drop them.

Ok seems clear now. So for some fields: even if the field isn't specified in the issue view, it will still be visible in the 'agent view' page?
I was aware of hiding the fields, but it seemed strange because I don't want some fields (like time tracking, development, request language) to be even shown on the agent view page because I didn't select them anyway.
