It appears in Jira forms (newly released feature), if I create a 'multi-select' field type and try to link this to any type of multi-select field that I have added through the 'Custom Fields' functionality, when I add the form to the service desk portal it does not display/render any of the options for the field. Has anyone else experienced this issue?

I've just tested this in my service project and it does show the values/options from the select list multiple choices.
Have you added the form to the correct request type?

Are you linking your multi-select field to a multi-select field that was created in the 'Custom Fields' area?
I don't see why the request type should affect this, as it is linking to a field that is not 'tied' to a specific request type? Also, other fields which are 'linked' to custom fields are working as expected (single drop downs etc.). If it was tied to request type, I'd expect all fields to have the same bug/issue.
It appears like it shows ok in the form builder (list of options appears in the 'Build' tab and options are selectable in the 'Preview' tab) however once deployed to the portal and loading the form there, clicking the multi-select simply displays text 'No options'.

In my Form, I've added a Multiselect dropdown. In the LINKED JIRA FIELD, I've selected that custom field. After having done this, you'll see the options/values of that custom field as CHOICES in your form.
Then, in the Settings tab of the form, I enable the toggle Request form and select a request type from the list in order to link the form to a specific request type. That, of course, is not relevant to your use case because you confirm that other field types are working correctly.
As for the reason why is displays 'No options', it's unclear to me as well. Does this custom field have a specific context (i.e. limited to a certain project and/or issue types)?

These are the same steps I followed, and I'm equally puzzled by the 'No options' given the field renders correctly in the build and preview screens in the back end.
In terms of the field config, it's limited to a certain 'screen', but that is the screen that the form is on. Which 'screens' is your custom field configured for? I'm wondering if the screen config isn't correct and it's maybe not displaying the options as expected...
