I need help adding the sender's name or email to an automatic reply email. Can you help me figure out how to do this ?

With Jira automation you can use smart values. In your case:
{{issue.Customer Email ID}}
In Jira automation the action will look like this:

I'm getting notifications (image attached) from JIRA when a customer writes an email. However, the notifications don't include the customer's name or email. Is there a way to add this information to the notification?

When a customer comment is made or a customer created an issue, you can send an email via an automation rule. I'm not aware that you can change the default Jira email.
