We have 5 different request types in our Service Desk and I would like to control the sort order in the Help Center. How do I set the correct order?
You can just use drag and drop to change the request types to your desired ordering.
Go to Project settings >> Portal settings >> Portal groups tab, you can change the portal group ordering by drag and drop (via the 6 vertical dots symbol. For the request types associated within each specific group, expand the group, then use the (6 vertical dots symbol) to drag and drop the request types to your sort order needs.

What if you want to change the order of request types that are not grouped into categories? Like just a list of four request types and you want the fourth one to be first.

@Vanessa Scherstrom you can't, only request types that are belonging to a portal group can be sorted. The hidden request types will appear in alphabetical order.

You need to go Project settings >> Channels and self service >> Portal. Using the UI, you will be able to reorder you request types hosted in the existing groups.
