I created a service request at the Jira service desk that requires multiple user approvals, from which one approver approved the request and the other request is pending. So, how to check the date and time of the first approved request?
Is there any way to check the each approver's approval datetime from jira service desk Rest API?
or is there any limitation of Jira service desk to not update date and time of when an approver approved the ticket in the updated field

Currently, the date time of approval is not captured in Jira Service Management.
As an alternate, you can have different status for approvals which will help you capture the date time for example, if you need approval from 3 Managers, you can have 3 different status and transition them on approval. This way, when the date time would be available as and when the status transition happens.

Note- In our project we are not sure how many approvers are required to approve the request, our customers may raise tickets with any number of approvers (always dynamic).

As the number of approvers is not pre-defined, we will not be able to build it into the workflow. In case you have can define the process with specific approval levels, then the workflow can be customised to cater to them and will help you to retrieve the approval timestamp.
