I tried to set automation on Assignee for requests raised by email (Next Gen Jira Project), and finally ended up without a solution. Please share the solution to set up, request type, and priority for requests raised by email

You need to you configure the automation rule where you can configure the Assignee, Priority and Issue type ( Request Type) when issue is being created from email
