I created a Service project, the issues are created through a service request but I require to create subtasks for those service requests. Is it possible?

That depends on whether or not the subtask issue type is available in the project, and the type of your Service Management project.
Find the project Type information on the View All Projects page under the Projects menu. When you find your project in that list does the Type column say just "Service Management" or does it say "Team-managed service management"?
If it says "Team-managed service management" then you will not be able to use subtasks in that project.
If it says just "Service Management" then you are using a Company Managed service management project. In that case go to the Project Settings, select Request Management, then select Issue Types. If your project includes a subtask issue type you will see this lozenge next to one of the listed issue types.
If that is present then you can create a subtask under another issue by clicking the Create Subtask button below the Summary of the issue.

No, it is not possible to change the project type.
You would have to create a new, empty Company Managed service management project, recreate all your customizations, and move the issues from the current project to the new project.
Migrating issues between Team Managed and Company Managed projects can result in loss of data. Refer to
