In my JSM i have 3 projects and Project A, Project B, Project C.
I want to take a back up of Project B.
which means that i want to take only project B which has all the custom fields and workflows and Issuetypes and Schemas etc. Except data
If possible please let me know the process for the same.

I represent Revyz, we have built an automatic backup solution that runs every 24 hrs and also supports on-demand backups with granular restore of Jira objects be it issues or just attachments, workflows etc.. The app also allows you to pick specific projects you want to backup, although I would recommend backing up all your data, as I mentioned above our speciality is in granular restore be it a specific issue or a workflow etc..

You can't take a backup of a single project on cloud. It's all or nothing.
If you want to take a backup of your project config, then the best advise it to use this app (https://marketplace.atlassian.com/apps/1221996/smart-project-config-and-documentation?hosting=cloud&tab=overview) which is free and exports to a word document all the project config:
Of course you can't use the above document to import anything back to Jira. It's only for safe keeping and reference. Try it out.

A Cloud backup is a backup of the entire site, not a single project.
In order to backup a single project without data, I would personally create a new project called "Backup Project B" with shared configuration.
This will create a "copy" of Project B with the same schemes (screens, workflows, fields, etc.) but without the issue data.
