So a colleague has requested we make the file size bigger on the jira tickets and I'm really wondering of there's a reason I shouldn't.

Since you're on JSM premium you don't have limitations on storage size (2 Gb on the free plan, 250 Gb on the Standard plan), so sure, set the file size to maximum.
