A team member felt there should be an easier way to assign subtasks than to create the subtask and then go back and have to assign it. Is there?
If you'd like to auto-assign a subtask, you can set a post function for that. Make sure subtask is not sharing the workflow with any issue type so the changes would not affect other issue types.
You can set it to the user who performed the issue creation, to the reporter or lead developer or even any specific user:
Thank you, @ Hazwan. On one of the teams, I have 3 team members who often times add their own tasks but mainly it's me adding tasks for each user story. Would this post end function help for this? The Assign to a Reporter sounds like it may work for the team members adding their own tasks but not for me adding tasks for them. Is that correct?

Yes that's right. If you have the Assign to a Reporter post function, the reporter will be the assignee. So in this case, you may want to use our Project Automation - https://www.atlassian.com/software/jira/features/automation
And then you can set up as per this screenshot:
So what this does is that, if a sub task is created by you, the assignee of the sub task will be copied from the parent issue (considering that the parent issue is assigned to your team members). Else, if a sub task is created by someone other than you, the sub task will be assigned to whoever creates the subtask.
