When I try to add the Assignee field to the Request form through the Request Types menu, it says that the field cannot be shown.
Are there any known workarounds for this? I don't want customers to be able to edit or input anything for the field, but I would like them to know who is working on the Issue.
Any ideas?

You cannot add fields to what is displayed for existing tickets. So even if you could add to the create issue form, which you cannot, it would not show in the list of issues.
