We are running Jira Service Management (ex Jira Service Desk) Server edition, and we would like to have conditional fields.
Basically, we want to have a custom field where if option A is selected some fields/options to expand and if option B is selected other fields/options to be showing, is this possible?

You can do this with a couple of different apps, such as Extension for Jira Service Management or Scriptrunner for Jira.

Yes, these are great suggestions from Kian.
There is also the option of using ProForma Lite (a free app) that allows you integrates forms into your issue. You can ask all sorts of question types and then use conditional logic to only display the right information at the appropriate time. If your data capture requirements are large, then formatting into a form can be a really good option.
