We need to change the notification email's standard english "Just confirming that we got your request...." text to something else, in german. Is there any ways to do so?

To change the content ""Just confirming that we got your request....", Go to your JSM project settings --> Customer notifications.
Click edit against Request created and add required text in Content text box.

You could either go to customer notification and change the text for the issue created event or better yet go to language in project settings and here add the German language.
You will need to translate most sections of the application following this to your expectation in German.
Lastly you need to notify users to change their language in their user profile in the customer portal to German.
please use the first solution if you primarily work with emails and the second if you have a customer mix (German and English) and most work from the customer portal.

To supplement what @Rilwan Ahmed and @Ismael Jimoh suggested, you can also setup automation rule using Automation for Jira (out of the box components with JSM) to send out custom email based on issue events to further enhance your customers experiences with JSM.
