When claiming tickets from our queue is it possible to have the ticket not show in the queue? For example if there are tickets A,B and C in All open tickets and I claim ticket A, only B and C will show in All open tickets and ticket A will show in in All my tickets.

I typically have an "unassigned" queue for unassigned tickets. It's an easy place to see what needs to be picked up without the noise of other open tickets. When they're picked up, then they disappear from the queue. The All Open queue is typically intended for everything that is open regardless of assignee.
If necessary you can always create an assignee is empty queue to contain only all unassigned tickets as suggested by @Mark Segall or edit and add this to your existing queue’s query.
